The bass and bream Mediterranean industry has faced and continues to face a strong market crisis, mainly due to overproduction. This situation has increased the interest in diversifying the products offered to the market and has pushed farmers to look for new species.
In spite of this situation and after many years of research and studies, results to date have never reached the expected level anticipated; either because of the low receptivity of the market for some new species or because the rearing technique has yet to reach a sufficient level of technical or economic success.
Anyhow, some important progress has been made recently particularly for new interesting species like: meagre (Argyrosomus regius), grouper (Eptnephelus marginatus) sole (Solea senegalensis), amberjack (Seriola dumerili). These species could, in the future, create new applications for the professional production sector.
